What shouts “Mexico” more than a good enchilada? You can make some very quickly with this fast recipe. Though it’s not exactly what you’d find in Mexico City, it’ll sate the appetites of your ninos and ninas.
Ingredients: broiled or grilled chicken (you can even get this pre-made and pre-cooked; all you have to do is warm it up!); shredded lettuce; diced tomatoes; diced onions; low fat sour cream; low fat Monterey jack cheese; sliced black olives; sliced green olives; salsa (mild, medium, or spicy); and numerous 10” or 12” flour burritos.
Directions: Assemble your burritos by laying down a flour burrito, spreading the sour cream in the middle of it, then layering all the other items except for the cheese and salsa. Wrap it up and put it on a baking sheet. Continue making enchiladas until all burritos have been used. Then, sprinkle salsa and cheese on top of the enchiladas. Bake in a 350 degree oven for about 10 minutes to melt the cheese and warm them up. Enjoy!
Mexico-inspired bean dip
This bean dip is quick to assemble and tastes amazing. Serve it warm and watch it disappear.
Ingredients: one can of low fat refried beans; one small container of low fat sour cream; one 8 ounce package of Monterey jack cheese; one small jar of sliced black olives; one jar of salsa (your favorite); and low fat baked tortilla chips.
Directions: In a casserole dish, layer the items as follows: beans, half the container of cheese, both jars of olives, sour cream, rest of cheese, and salsa. Then, warm up the casserole for about 15 minutes (or until the cheese is melted) in a 350 degree oven. Serve with chips.
Homemade Tortilla Chips
Ever gotten fed up with your tasteless tortilla chips? Try these homemade versions on for size! You won’t have to travel to Mexico – you can get them in your own kitchen. And the folks who get to enjoy them will be happy to call you a talented senora, senora, or senorita.
Ingredients – one package of 12” flour burritos; olive oil; Mexico spices (often, major spice makers will offer a blend of Mexico-inspired flavors); low fat sour cream; low fat (or homemade) guacamole; and salsa (your choice).
Directions: Using a pizza cutter, slice the burritos into quarters (thus, there will be four small “triangles” for each 12” burrito). Lay them out on a baking sheet (make sure they don’t overlap). Brush each triangle with olive oil, then lightly sprinkle with Mexico-inspired spices. Bake at 350 degrees for about 12-15 minutes until just browned. Serve warm with salsa, sour cream, and guacamole.

Bill Kitto was not traveling for his first time in Mexico when he got into an accident near San Vincente, Mexico while driving his friend's truck. An exceedingly cautious driver, Bill was at the wheel because road conditions were deteriorating due to an incoming rain storm, which left him at the mercy of his friend's Mexican insurance holder. Bill and his friend were traveling at a cautious 30 MPH hour when they rounded a corner to find a Mexican military hurtling towards them partly on their side of the road. Unable to avoid the crash, the two vehicles impacted head-on left, sending the personnel scattered down an embankment and Bill and his friend into the cliff wall on the opposite side. Within minutes, the Mexican police arrive and one speeds an injured Bill away to a location unknown to him or his companion who is left standing roadside. In Mexico, there is no 'innocent until proven guilty'-exactly the opposite.
Bill finds himself in a Mexican detention cell without any contact and without any knowledge of his fate, in part because at this point he has no way of knowing whether his friend even carried Mexican auto insurance. Hours later, guards return to take him back to the accident scene where he is at least able to reunite with his friend and his friend's Mexican car insurance policy. In the U.S., this might mean problem solved, but in Mexico, there is much more to go through.
Bill's complete story is long and involved-and not a little discomforting. Bill spends a week alone in a Mexican hospital trying his hardest to stay injured enough to avoid the inside of a Mexican jail; he's at the mercy of the local government, questionable legal representatives, and muddled technology that makes what amounts to paying his way out an act in futility. There were many times when Bill was unsure if he would ever get out of the mess-if he could afford to get out of the mess.
In the end, Bill does gain his tenuous freedom, only after spending more than $28,000 US. Luckily for Bill, he was able to secure the money to secure his freedom, but many other Americans would have fallen far short. Because of the bureaucracy and dishonesty encountered in Mexico, Bill is unsure if he will ever see a return on his life's investment.
Bill took away a few things from his experience that he strives to pass on to all Americans traveling in Mexico.
* Carry a cell or satellite phone-and learn how to dial in Mexico
* Remain in contact with family in the states that can help you
secure funds if needed and contact Mexican insurance companies as needed (because your ability will be limited)
And above all else-
* MAKE SURE YOU HAVE MEXICAN AUTO INSURANCE-with very good coverage
to cover personal injury and property damage
* Make sure the Mexican car insurance is from a reputable company
* Make sure you carry proof of Mexican Insurance in the vehicle, accessible at all times! (And if you are separated from the vehicle, take the Mexican car insurance ID cards with you!)
Bill Kitto's long and trying ordeal proved one thing to him-money makes the Mexican world go round. If you do troll with these lures, they can useful. Just do not troll around aimlessly. It is always easy to do with a case of Canadian O.V. Concentrate on key transitions, edges, drop offs. Breaklines and specific bottom contours. Remember that if you pause the lure for only a split milli second, the Pike of your dreams, following your lure has only the option of opening its mouth to grab that lure.

The weight of the jig and the size of the dressing depend of course on the depth of the water and the size of the fish. Of course big is better but when the fish are aggressive cast out the jig and soft plastic? Let it fall to the bottom. Then quickly “snap” it back to your boat briskly using an exaggerated lift. Then fall, pause and retrieve.
Remember – you came all this way to get that monster Pike of your dreams. That fish did not live this long and grow this big without being both smart as well as hungry.

Planning a vacation can be a very stressful, especially when you are going someplace you have never visited before. So I have written my secrets to the perfect vacation.
Making sure your vacation goes according to plan is not difficult to do, but it does need to be planed carefully.
First you need to decide where to go, this year I have decided to go to Holland for my vacation. Once you have decided where you want to go on vacation you can start to plan the things you want to see and do. In Holland I am interested in the Van Gogh museum, the Rembrandt museum and the Casino.
I have always enjoyed casinos, so this is going to be my first chance to go to a casino in Europe, so how can I pass up the chance to play some European Roulette, and I have been practicing at an online casino, ok I have to admit I have also been "practicing" poker and blackjack, please don’t tell my wife.
After you have figure out where you want to go and what you want to do when you are there you can get a feel for where you want your hotel to be.
There are many different websites that offer the best prices on hotels, so make sure to check several of them before making a final decision. Most of these sites will offer pictures of the hotel facilities and the different rooms.
After looking at the hotels pick the top 3 and do a search on the internet for them. Try to find reviews from people that have stayed there before. The hotels site is always going to tell you how great the hotel is, but if someone were annoyed enough to trash a place or tell you how great it was, then you can be pretty sure they are telling you the truth.
The first hotel I was looking at for my Amsterdam trip said it was close to the center of the city, in a nice area, but reading reviews from former patrons told me the area was filled with drug addicts and homeless, and this is not really what I want to see on my vacation, so I found a much nicer location. It is a little farther from the city center but it is near the museums we want to go to, so by being closer to them we can get up early walk to the museums and spend the rest of the time walking around looking at the shops and attractions inside the city's center.
Now all that is left is packing the right clothes. Unless you are going to someplace where the weather is always a constant, make sure to pack clothes for both good and bad weather. My trip is in a week and the weather is expected to me mostly sunny and in the 50's but there is a chance of rain so I will be packing a coat for the rain, ad extra socks just in case.
If you are gong to be in Europe and plan to visit a casino you should know that in Europe casinos are more upscale then in the USA. They will not let you in wearing your shorts a T shirt and sandals, most casinos require men to wear a tie and jacket or a turtleneck.
It is also always helpful to buy a travel guide for where ever you are going. Besides having helpful recommendations for things to see and places to eat, many of them offer discounts for attractions.
Well the only thing left is to go and have a good time, I know I will.

On the other hand hard crankbaits excel in “open water”, on deep flats and around main lake rocky structures in the time periods from the mid summer until freeze up at Lake Manitoba Narrows. You can even employ lipless versions of these lures as they are superb around weed and seed lines.

Of course big is better but when the fish are aggressive cast out the jig and soft plastic? Let it fall to the bottom. Then quickly “snap” it back to your boat briskly using an exaggerated lift. Then fall, pause and retrieve.
Remember – you came all this way to get that monster Pike of your dreams. That fish did not live this long and grow this big without being both smart as well as hungry.

If the restaurant or hotel has problems with accommodating disabled individuals, you can try talking to the management for the necessary adjustments.
